No Boil Spaghetti with Spicy Sausage

One pot=less clean up and who doesn't love that! 

The boiling water and juice from the tomatoes creates your sauce and at the same time your spaghetti cooks. When adding the hot water, I start slow with about 3-4 cups and let that absorb and only add more water towards the end of the cooking time if needed. 

Spaghetti does not take long to cook so I will continue to check the doneness of the pasta, you don't want it overcooked. 

​​​​​​​​​​​​​​No Boil Spaghetti with Spicy Sausage

Makes 4-6 servings

  • 1 lb italian sausage (I prefer spicy but of course you can use mild)
  • 1 medium onion cut into slivers
  • 1/4 cup red wine
  • 4-5 cloves garlic minced
  • 2 Pints Cherry or Grape Tomatoes      
  • zest of 2 lemons
  • 1 lb spaghetti  
  • ½ grated parmesan
  • 1 bunch of kale
  • 2 tsp salt
  • 6 tbsp olive oil

  1. In medium saucepan add italian sausage (remove casings) and break up while cooking. Once sausage has browned add slivered onions and cook for 2-3 minutes. Add red wine and cook until liquid has evaporated.
  2. Remove sausage mixture to a separate bowl.
  3. Meanwhile bring water to a boil separately (I use a kettle and boil about 4-6 cups of water).
  4. In same saucepan add dried spaghetti (break in half to make it easier to eat and fit into pan), cherry tomatoes and lemon zest.  
  5. Add boiling water to spaghetti and cover and let simmer until liquid has evaporated while stirring throughout.
  6. While the spaghetti is cooking chop kale (should have about 3-4 cups chopped).
  7. Once spaghetti is done and liquid has evaporated (Tip: if you find you have too much liquid you can remove as needed) add kale and sausage mix and cook for 2-3 minutes.
  8. Top with parmesan cheese and serve.
