Gluten Free Peanut Butter Chocolate Chunk Cookies

Cookies from scratch in 30 minutes. A classic flavor combo peanut butter and chocolate makes for one awesome cookie.  Soft and chewy with hefty chunks of chocolate.



Gluten Free Peanut Butter Chocolate Chunk Cookies

Ingredients:

  • 1 1/2 cups almond flour or all purpose flour
  • 1 tsp baking soda
  • 1/2 cup natural chunky peanut butter
  • 1/2 cup natural smooth peanut butter
  • 4 tbsp unsalted softened butter
  • 1/2 cup granulated sugar (bit less is always better)
  • 1/2 cup packed brown sugar
  • 2 large eggs and one egg white
  • 1 tsp vanilla extract
  • 8 oz semi sweet chocolate cut into chunks
  • *egg white not needed if using all purpose flour

Instructions:

  1. Preheat oven 350 degrees
  2. Line large cookie sheet with parchment paper or silpat.
  3. In large bowl beat butter for 1 min then add peanut butters, sugars and eggs, beat until smooth. Add vanilla. Gradually add flour with mixer running until combined. Add chopped chocolate. Drop 2 heaping tablespoons of dough 1 inch apart. Place cookie sheet in fridge 2 mins.
  4. Take out and bake until golden approximately 14 to 16 mins.

Makes about 24 cookies.
